Antioksidansi su sredstva koja svojim prisustvom sprečavaju razlaganje masti. Prirodne masti poseduju izvestan stepen otpornosti na oksidaciju. Antioksidansi se stavljaju u hranu koja sadrži masti više od 8%. Antioksidansi sprečavaju stvaranje peroksida, odnosno užegnuće masti.
